Bread & Friends: The New Bakery by SANA Group in Lisbon

Bread & Friends is one of the latest restaurant brands from the SANA Group. The space on Av. Fontes Pereira de Melo, in Lisbon, is the first of several that the SANA Group plans to open in the near future. In this space, a variety of traditional Portuguese pastries is served, in an environment filled with comfort, where exclusivity and quality in coffee roasting are ever-present.

The Bread

It is the starting point in the creation of Bread & Friends. Artisanal bread, baked on-site, made with slow-fermented sourdough. It is produced in a space where the customer has full visibility, making the process more transparent. The bread is made in various forms, with different doughs, special flours, and diverse combinations.

Bread is served with tradition. The bakery highlights the yellow corn broa, made with scalded corn flour to achieve a moist gelatinization, reminiscent of broas from the past, as well as the chestnut and fennel bread, crafted with traditional refinement, using seasonal chestnuts that are peeled and cooked, with the cooking water reused to enhance the flavors of the dough.

The Pastry

The pastry is traditional and also produced in front of the customer. The selection includes classics such as Bolas de Berlim, made from butter brioche with extended fermentation and sourdough addition, Brioche Craquelin, filled with artisanal creams, and Chocolate Babka, made with sweet laminated dough, fermented for 24 hours, and filled with chocolate, walnuts, and crunchy praline.

The Coffee

The Bread & Friends café introduces two premium coffee blends, roasted in-house at different times throughout the day. The coffee selection is based on two product ranges: traditional, everyday coffee and gourmet coffee, made from beans artisanally roasted in-store. Uganda Robusta and Guatemala Arabica are the origins of Bread & Friends’ coffee.
